Pressure cooking is a method of cooking in a sealed vessel that does not permit air or liquids to escape below a preset pressure. Since the boiling point of water increases as the pressure rises, the pressure built up inside the vessel allows the liquid to rise to a higher temperature before boiling.
Pressure is created at the beginning by boiling a liquid, such as water or broth, inside the closed pressure cooker and the trapped steam increases the internal pressure and temperature. This causes wet steam (or "saturated steam") to be forced through the food and results in faster cooking times compared to conventional cooking methods. Afterwards, the pressure is slowly released so that the vessel can be safely opened.
Pressure cookers may be referred to by several other names. An early pressure cooker, called a steam digester, was invented by Denis Papin, a French physicist, in 1679. Large pressure cookers are often called pressure canners in the United States because of their capacity to hold jars used in canning. A version of a pressure cooker used by laboratories and hospitals to sterilize objects is known as an autoclave. In the food industry, pressure cookers are often referred to as retorts or "canning retorts".
Pressure cooking is often used to simulate the effects of long braising or simmering in shorter periods of time.(end)

Pressure cookers are safe. Someone once told me when I was a young Airman cook in the US. Air Force everything is as safe as you want it to be. There we used industrial sized pressure cookers known as steamers. They were capable of cooking 50 to 100lbs of food or more at a time. I was defiantly afraid of them because the steamer created a great deal of pressure and could blow the door and you across the kitchen.
To become comfortable I develop sort of a check list in my mind before using them.
Make shore the equipment is in good working condition. Read the manual to learn how to use correctly. Keep it clean especially where the lid seals and locks. Start with small items that have short cooking times until you become comfortable . Never leave the cooker un attended for long periods of time while in use. Please remove the plug from the wall when not using it and be sure to follow the cleaning instructions found in the manual.
Pressure cookers are a great addition to your kitchen.

My mom taught me how to use a pressure canner. I might add, it is important to follow the rules and pay attention when using it. Yikes! I for one, have forgotten it and the pressure got to high! Makes for mussy food too. lol
